Caramel corn recipe (really, really good!)

A good recipe that is delicious and easy to make from scratch. Great with or without nuts. Fun for events that you need to make large portions for. No need to know how to make caramel for this to come out great.

  • 3 gallons popped corn
  • 3 cups peanuts or almonds
  • 2 cups brown sugar
  • 1 cup white corn syrup
  • 1 tsp. vanilla
  • 2 sticks butter
  • 1 tsp. salt (if you use salted butter, I omitted this salt)


Melt together sugar, corn syrup, vanilla, butter and salt. Pour over
popped corn and nuts and mix until well coated. Bake at 250* for 1
hour in a large roasting pan, stirring every 10 minutes. Cool and
store in an airtight container.

To make it more fun or different you can ad once it has started to cool chocolate chips or small marshmallows.
