Lemon Flag cake

Great refreshing lemon flag cake for any occasion. Also It looks great with very little work, makes any cook look like an expert. Use fruit to make it look like a flag. I like to make it in summer for the 4th of July.

Ingredients

cake

• 1 box lemon cake
• zest of 2 lemons
• juice of 2 lemons

frosting

• ½ cup butter
• 2 or 3 cups confectioner sugar
• juice of 1 lemon

decorations

• red fruit like raspberry or strawberry
• blue fruit like blueberries
• whipped topping or whipped cream

Putting it all together

cake

follow directions on cake box except use lemon juice as part of the water requirement,and add lemon zest. Follow cooking instructions. Use rectangular cake pan.

Frosting

beat butter till soft add sugar and lemon juice. You will want a thick frosting. Cover top and sides then decorate upper left corner with blueberries and rest alternate lines of red fruit and whipped cream to make it look like American flag or rearrange and make French or British flag or any other with red, white and blue.
